摘要
目的:建立一套稳定可靠的使用超高效液相色谱-串联质谱(UPLC-MS/MS)测定食用油中的抗氧化剂叔丁基对苯二酚(TBHQ)的方法。方法:用乙腈振荡萃取样品中的TBHQ,以乙腈-水为流动相洗脱,以反相C18柱作为分离柱,以电喷雾离子源为接口,负离子模式扫描,选择监测(SRM)模式检测,外标法定量。结果:本方法的检出限为0.10mg/kg,在0.05~2.5μg/ml浓度范围内呈良好线性,相关系数大于0.999,回收率83%~115%。结论:实验结果表明该方法灵敏度高,检出限低,确证能力强,分析时间短,能够准确的测定食用油中的抗氧化剂TBHQ的含量。
