摘要
为了解广东人日饮的老火汤营养状况,作者等采用原子吸收光谱法测定了10种老火汤中Cr、Mn、Fe、Co、Ni、Cu、Zn、Mo等8种人体必需微量过渡元素的含量。结果表明,老火汤中人体必需微量过渡元素的溶出率一般都较低,而且各种微量元素的溶出率差异较大,大量的微量元素仍残留在汤渣中。
In order to investigate the nutritional ingredients of the long-boiled soups which the Cantonese eat in ordinary meals,ten kinds of soups were tested quantitatively of the eight essential transitional metals(Cr,Mn,Fe,Co,Ni,Cu,Zn,and Mo) by means of atomic absorption spectrometry(AAS).The result indicated that the concentrations of all the eight metals in the soups were low,and differed in solutions.The main part of the metals still remained in the soup dregs.
