摘要   大豆的生物活性成分已经成为世人注目的研究焦点.1999年10月FDA发布了第11个健康声明:每人每天食用25g黄豆,可以减少发生冠心病的风险.而近年来一些研究表明,大豆及豆制品具有更加广泛的生物功效,如抗肿瘤、防治骨质疏松和增强记忆等,这些功能均与大豆异黄酮(soybean isoflavones)有关.因此,大豆异黄酮成为一个新的研究热点.基于此,笔者针对近年来国内外关于大豆异黄酮的生理功能及其分离检测方法的相关研究做一综述.……
