摘要
本文对海水双壳贝类的质量控制进行了综述,指出了现今双壳贝类出现的各种质量问题,详细介绍了影响质量的四大方面的因素,即有机物污染、微生物污染、毒素污染和重金属污染,并探讨了国内外对贝类的质量要求和控制手段。
The quality problem of bivalve mollusks was reviewed. Organic compounds pollution, microbial pollution, shellfishpoisoning pollution and heavy metal pollution were the main four factors which influenced the quality of bivalve mollusks. Thequality standard and the control method were discussed too.
