中式烹调师操作技能考核国家题库的开发是一项复杂、系统的工程。该题库的开发,首先要制定一个全国统一的考核内容结构,在此基础上,设计测量模块和考核项目。考核内容结构是命题的大纲,测量模块是命题的重要依据,考核项目则是具体的评价内容。
Developing national examination question bank of appraising operational skill of China's Cook is a complex systematic project. At first, the parties concerned must draw up a unitary structure of assessment contents and then design serveying mode and assessment project. The structure of assessment contents is the outline of setting questions;the serveying mode is the important basis of setting questions; the assessment project is the coneret contents.
