摘要
本文以豆粕为原料,利用木瓜蛋白酶和糖化酶分别去除豆粕中蛋白质和淀粉,用95%乙醇沉淀可溶性膳食纤维,过滤后用乙醇、丙酮洗涤滤渣,去除脂肪等脂溶性物质,干燥,即得总膳食纤维。结果表明:木瓜蛋白酶最佳工艺条件为:加酶量16%、温度50℃、时间3h、pH7;糖化酶最佳工艺条件:加酶量2.0%、温度60℃、时间2h、pH4.04.6。总膳食纤维提取率为36.74%。
Protein and starch were removed from soybean residue,as the material,by papain and saccharificase.Dietary fiber was precipitated by 95% alcohol and filtrated by alcohol.Total dietary fiber was acquired after washing filer residue by acetone and removing fat. The results showed that optimum conditions of papain were 16% papain,50℃,3h for hydrolyzation,pH7.0.optimum conditions of saccharificase were 2.0% saccharificase,60℃,2h for hydrolyzation,pH 4.0 to 4.6.The extraction rate of dietary fiber was 36.74%.
