摘要
通过对窖香是突显浓香型白酒传统风格的主体香气这一酒体机理的揭示,并在剖析和认识GL窖香调味酒的生产特点及其酒体性能基础上,进一步阐明了针对酒体窖香香气不足,GL窖香调味酒就是其酒体勾调的重要物质基础,笔者认为GL功能调味酒产业化是四川浓香型白酒酿造的地域资源优势对行业的又一贡献。
Based on the understanding that the major fragrance of Luzhou flavor liquor comes from the cellar flavor,and the characteristic analysis of GL cellar blending liquor production,the deficiency of the cellar flavor in GL blending liquor was elucidated.The authors proposed that the industrialization of GL functional blending liquor is another contribution of Sichuan geographical resources to the liquor industry.
