Surprisingly,people in northern China are very keen on carbohydrates.Off the National Road 212 of the Sichuan-Gansu Highway,in the south of Northwest China’s Gansu Province,there is the Ma family,who has made a small fortune selling noodles,called daoxiaomian.These noodles taste especially good because as soon as a round piece of dough is sliced thinly from the top,it immediately drops and cooks in a pot of boiling water.The Ma’s family’s special technique of mixing and slicing dough has been passed down for two generations,and its good taste has earned the eatery a nickname of"Super Restaurant."
