摘要
在ypd培养基条件下,研究了尿素这种氮源对酒精发酵的影响,发现其对酵母菌发酵生成酒精的最佳浓度值为9.6 g/L。并对5种发酵无机盐硫酸镁、硫酸锌、氯化镁、氯化铁、磷酸二氢钾的浓度与发酵酒精浓度之间的关系进行研究,初步找到了该株酵母所需无机盐的临界值,分别是硫酸镁为4.8 g/L,磷酸二氢钾为4.8 g/L,氯化镁为4.8 g/L。添加硫酸锌、氯化铁的两组实验得到的乙醇产量明显比其他组要低,此酵母菌发酵随浓度的增大乙醇产量降低,由此推断硫酸锌、氯化铁对此种酵母菌发酵有着制约作用。
In ypd medium conditions,the effect of urea on alcohol fermentation was studied,and it was found out that the optimum concentration was 9.6 g/L.The relationship between five inorganic salt concentration,including magnesium sulfate,zinc sulfate,magnesium chloride,ferric chloride,potassium dihydrogen and ethanol concentration was studied.The critical value of inorganic salt was preliminary found,which were magnesium sulfate of 4.8 g/L,potassium dihydrogen of 4.8 g/L(no more than 4.8 g/L),and magnesium chloride of 4.8 g/L.It was found from the test that the ethanol production in two groups of experiment were obviously lower than others,and ethanol production decreased with increasing the inorganic salt's concentration.Therefore it can be inferred that zinc sulfate and ferric chloride have restrictive function on fermentatio by yeast,which needs further optimization and research.
