摘要
为了给食品冷链加工流程提供科学管理决策,致力从质量绩效评价角度找出加工流程的瓶颈节点.首先对食品冷链加工流程质量绩效内涵进行界定,基于冷链加工流程质量管理内容与ISO9004标准、ISO22000标准建立关联矩阵,构建食品冷链加工流程质量绩效评价模型与评价指标体系.利用TFN-AHP(三角模糊数层次分析法)计算管理与沟通、资源管理、安全产品实现过程管理、结果测量和过程改进四个一级指标权重,得出在加工流程中应将安全产品实现过程管理模块作为重要模块进行管理,并以沧州地区两条猪肉冷链加工流程为例验证了食品冷链加工质量绩效评价指标体系及评价方法的有效性.
In order to provide scientific management decisions for food cold-chain processing process,the paper intends to locate the bottleneck of processing process from quality performance evaluation.Firstly,the quality performance of the food cold-chain processing process is defined;then,the relating matrix based on the cold chain process quality management contents and ISO9004 standard as well as ISO22000 standard is set up,thus constructing the evaluation model and evaluation index system for food cold-chain processing process quality performance.Via TFN-AHP(triangular fuzzy number analytic hierarchy process) management and communication,resource management,security management,product realization process measurement and process improvement are calculated.In conclusion,the safe product realization process management module should be as the important management module.Finally,two pork processing processes in Cangzhou are selected for an empirical analysis to validate the effectiveness of the quality performance evaluation index system and evaluation method for food cold-chain processing.
