藏灵菇发酵乳中乳酸菌的分离鉴定及其生物学特性研究 被引量:7

摘要 本项研究对西藏自治区的藏灵菇发酵乳中分离到的20株乳酸菌,其中杆菌3株,球菌17株,进行属和种的鉴定,并进行了耐酸性研究,结果表明:3株乳杆菌分离株,2株归为植物乳杆菌(Lactobacillus.plantarum),1株归为小鼠乳杆菌(Lactobacillus murinus)。17株球菌分离株归为4个属,其中乳球菌属10株,明串珠菌属3株,链球菌属3株,片球菌属1株。10株乳球菌属菌株中,2株归为棉籽糖乳球菌(Lactococcusraffinolacis),8株归为乳酸乳球菌乳酸亚种(L.lactis subsp.lactis)。3株明串珠菌属菌株,2株归为酒明串珠菌(Leuconostoc oneos),1株归为乳明串珠菌(Leuc.lactis)。3株链球菌属菌株中,1株归为猪肠链球菌(Streptococcus hyointestinalis),2株归为唾液链球菌(Streptococcussalivarius)。1株片球菌属菌株归为乳酸片球菌(P.acidilactici)。其中L.lactis subsp.lactis为优势菌株。3株乳酸菌可以在pH3.0琼脂培养基上生长,7株乳酸菌可以在pH3.5琼脂培养基上生长,其余乳酸菌不能在pH3.0或pH3.5的琼脂培养基上生长。 20 strains of Lactic acid bcteria were isolated from ZangLingGu collected from Tibet.According to their morphological,physiological and biochemical properties,including chemical characteristics,among of 20 strains were identified as follow:2 strains were Lactobacillus.plantarum,1 strain was Lactobacillus murinus;8 strains were L.lactis subsp.lactis,Lactococcus raffinolacis,Leuconostoc oneos and Streptococcus salivarius were 2 strains respectively, Leuc.lacu、Streptococcus hyointestmalis and P.acidilactici was 1 strain respectively.L.lactis subsp.lactis was dominant strains.Among the Lactic acid bcteria, 3 strains could grow at pH3.0,7 strains could grow at pH3.5 and others neither grow at pH3.0 nor pH3.5.
