摘要
利用甜菜干粕为原料,进行木瓜酶脱除蛋白的单因素实验和正交实验,结果表明酶法最佳脱除蛋白工艺为:0.20%的木瓜蛋白酶液,pH为6.6,温度为65℃,每次提取时间为60min,液料比为13∶1(ml∶g),添加次数为2次,可脱除98.56%的总蛋白。
Sweetboot pomace was used as raw material to extract soluble dietary fiber(SDF) and insoluble dietary fiber(IDF) with single factor experiments and orthogonal tests. Results showed that the optimum condition in enzyme protein was 0.20 percent concentration of papain,hydrolysis temperature 65 ℃, hydrolysis time 60min,added two times,and liquid-to-solid ratio 13∶1(ml∶g) with pH 6.6, under these conditions, the final product with 1.44% percent of protein was obtained.
