摘要
随着我国食品加工业的日益发展,防腐剂作为一类重要的食品添加剂在食品工业中被广泛应用。防腐剂可分为化学防腐剂和天然防腐剂两大类,我国明确规定了29种允许限量使用的防腐剂,现阶段常用的以化学防腐剂为主,但随着人们生活水平的提高以及保健意识的增强,化学防腐剂受到严峻挑战,开发抗菌性强、安全无毒、适用性广和性能稳定的食品防腐剂成为食品科学研究的新热点之一。本文对我国食品防腐剂的应用现状进行阐述,介绍了国内常用的防腐剂的种类及性能,以及现阶段我国对防腐剂的使用存在的问题,同时展望了未来防腐剂的发展方向和天然防腐剂的应用前景。
As the food processing industry is developing,preservatives as a kind of food additives in the food industry are widely used.Preservative can be divided into the chemical preservatives and natural preservatives.Our country stipulates 29 kinds of permissions limited the quantity used,now common in chemistry preservatives.But with the improvement of living standards and health awareness increases,chemical preservatives faced with severe challenges,the development of strong anti-bacterial,safe non-toxic,wide applicability and performance of stable food preservatives become one of the hot new food science.This paper mainly introduces the present situation of food preservations in China,mainly introduced the type and the performance of food preservations domestic commonly used,as well as the default of food preservations in our country,forecasts the future preservations development direction and application prospect of the natural food preservations.
