摘要
多糖胶体通过凝胶成型可以仿造很多生鲜果品.本文研究了海藻酸钠凝胶仿制葡萄的原理、方法.结果表明,以海藻酸钠、砂糖、氯化钙等为主要原料;经科学加工可以制成色、香、味、形均神似天然,且具有保健功效的人造匍萄.
The primary purpose of this investigation was to find the fumdamentaltheory and experiment methods of using gel Sodium alginate to simulate a kind of manmadegrape. The result indicated that the man-made grape can be processed bySodiumalginate glucose and CaCl2. and it possesses health effect, pleasant color. smell,taste and similar to material grape.
