摘要
菜肴中的汤类,不始于唐代,唐以前只有作调味的清汤,称为“汁”。唐代出现作保健饮料的“饮子”,从宋代起称为“汤”。到元代,“汤”才可以专称羹中的浓汤类,于是菜肴中有了汤,但尚未成为菜肴的一个门类。到清代,“汤”才发展为菜肴中一个大的门类,并且将羹也包括其中。
Soup in dishes didn’t come into being in Tang Dynasty. Before Tang Dynasty there was only chear soup used as condiment. During Tang Dynasty there appeared a healthcare drink “Yin Zi”,which was called “soup”starting form Song Dynasty.“Soup”was not specially called in the thick soup until Yuan Dynasty.Soup developed into a big calegory of dishes in Qing Dynasty, with thick soup included in it.
