壳聚糖/纳米TiO_2复合涂膜对樱桃番茄的保鲜效果 被引量:9

摘要 采用壳聚糖/纳米TiO2作为复合涂膜剂,对樱桃番茄进行涂膜处理,测定樱桃番茄贮藏过程中失重率、腐烂率、总酸含量、总糖含量、pH、感官品质的变化。结果表明,贮藏第10天时壳聚糖/纳米TiO2复合涂膜处理果实的总酸含量为0.16%,总糖含量为4.5%,分别比未涂膜处理组提高了45.5%、2.3%;其pH、颜色和硬度变化也比未涂膜处理组缓慢,且贮藏第10天腐烂率仅为7%,比未涂膜处理组低8个百分点。说明壳聚糖/纳米TiO2复合涂膜可以保持樱桃番茄营养成分,对樱桃番茄室温条件下的保鲜起到了较好的作用。 Cherry tomatoes were coated with edible composite film made from the mixture of chitosan and nano-TiO2.The changes of weight loss,decay rate,total acid and total sugar content,pH,and sensory quality of cherry tomatoes were determined during storage.The results showed that the content of total acid and sugar in coated cherry tomatoes was 0.16% and 4.5% respectively,which was increased by 45.5% and 2.3% compared to control,separately.The changes of pH,color and hardness were all lower than those of control.After been stored for 10 d,the rotten rate of coated cherry tomatoes was only 7%,which was 8 percentage points lower than that of control.Chitosan/nano-TiO2 composite film could effectively maintain the nutrition of cherry tomato,thus the preservation period of cherry tomatoes at room temperature could be extended.
