摘要 根据大米的卫生标准、质量标准与质量安全标准的相关要求,分析了大米在种植、加工、运输和销售等环节所存在的农药残留超标和重金属镉超标、食品添加剂超标或滥用、发生霉变或过期大米等质量安全问题;针对这些问题,从生产者与政府监管部门的角度提出了从源头防控农药残留、加强产地环境治理、完善质量安全检测体系、提高消费者的识别能力、加大法律惩罚力度等确保大米质量安全的对策。 According to the requirements of hygienic standards, quality standards and quality safety standards for rice, it analyzed the quality safety problems of rice in processes of planting, processing, transporting and sale, including standard exceeded pesticide residue and cadmium, standard exceeded or abusing food additives, moldy or expired rice. According to these problems, it put forward some countermeasures from the view of producer and government supervision department in order to insure rice quality safety, such as controlling pesticide residue from headstream, strengthening environment treatment of producing area, perfecting quality safety detection system, improving recognition ability of consumer, and increasing punishing degree of law.
