食品安全与超市采购体系变迁研究——以拉丁美洲超市新鲜果蔬采购体系为例 被引量:2

摘要 食品安全已成为全社会普遍关注的问题,但是保证食品质量安全必然会因信息不对称、道德危害和管理行为等因素而使交易成本增加,如何在保证食品安全的前提下减少交易成本就成为一个亟待解决的问题。目前发展中国家的超市消费占整个食品零售业的比重越来越大,因此,人们日常消费的食品质量安全与超市提供的产品高度相关。本文以对2002年巴西、2003年3~4月中美洲超市连锁点、批发商和供应商的相关数据为基础,通过研究采购方法的演变,希望给处于食品安全条件下的国内超市提供有益的经验。 With more social concern on food safety, the way to secure food safety becomes an urgent problem to resolve, while the unsymmetrical information, moral hazards and management misbehavior always act as transaction cost increaser. Consumption in supermarket accounts more and more in developing countries, so that the food safety is highly related with products offered by supermarket. The paper attempts to make the experience in Brazil for reference that in China.
