摘要
硒是人体必需的微量元素之一,具有抗肿瘤、防衰老、防辐射和增强机体免疫力等多种功能。近年来,随着人们生活水平的不断提高,各种各样的富硒产品及富硒保健品走进了我们的生活,硒的形态测定越来越受到人们广泛的关注。本文对目前主要检测硒形态的两种方法—原子荧光法(AFS)和电感耦合等离子质体谱法(ICP-MS)在食品、水果蔬菜、富硒保健品、生物样品等方面的应用进行了综述。
Selenium(Se)is one of the essential trace elements,and has anti-tumor,anti-aging,anti-radiation,and enhancing body immunity and other functions.In recent years,a variety of Se-enriched products and Se-health products come into our lives,and the determination of selenium morphology is increasingly concerned.In this paper,the two main detection methods of atomic fluorescence spectrometry(AFS)and inductively coupled plasma mass spectrometry(ICP-MS)used in food,fruits,vegetables,Se-rich health products,biological samples and other aspects are reviewed.
