摘要 脂肪酶是一类具有多种催化功能的酶,主要催化三酰甘油酯及其它一些不溶性酯类的水解、醇解、酯化、转酯化及酯类的逆向合成反应,还具有水解外消旋混合物以及酯和肽键合成的能力.脂肪酶已广泛应用于食品、化工、医药合成等诸多领域.就其来源、结构、作用及机制和应用等方面作一简要综述. 脂肪酶是一类具有多种催化功能的酶,主要催化三酰甘油酯及其它一些不溶性酯类的水解、醇解、酯化、转酯化及酯类的逆向合成反应,还具有水解外消旋混合物以及酯和肽键合成的能力.脂肪酶已广泛应用于食品、化工、医药合成等诸多领域.就其来源、结构、作用及机制和应用等方面作一简要综述.
