摘要 食品安全是世界食品业发展面临的重大课题和严峻挑战。确保食品安全卫生,最大限度的降低风险,已成为现代食品行业所追求的核心管理目标,也是各国政府不断加大对食品安全行政监督管理力度的重要方向。由于食品链中的任何环节都可能引入食品安全危害,必须对整个食品链进行控制。HACCP体系使企业将精力集中到加工过程中最易发生食品安全危害的环节上,将食品控制更加有效。HACCP体系是国际上认可的控制由食品引起疾病的最有效的、科学的、经济的方法。在食品生产中食品添加剂被识别为化学性危害,其添加工序常常被确定为关键控制点,食品添加剂也必然列在有害化学品的目录之中,需要进行严格的管理。食品添加剂的生产企业作为食品链中的组织之一,在企业实施HACCP体系,也是十分必要的。 Food security is one of the world food industry is facing significant challenges and issues.To ensure food safety and hygiene,to the maximum to reduce the risks,has become a modern food industry to pursue the core objectives of management.Governments also continue to increase food safety supervision and management of the Chief of the important direction.As the food chain in the link may be the introduction of any food safety hazards must be controlled throughout the food chain.HACCP system so that enterprises will concentrate on processing the most prone to food safety hazard areas will be more effective food control.HACCP is a system of internationally accepted food from the control of diseases caused by the most effective,scientific,economic approach.In the food additives in food production have been identified as chemical hazards,the process is often added to determine the critical control point,Food additives are bound to harmful chemicals listed in the directory,the need for strict management.The food additive manufacturers in the food chain as one of the organizations,The implementation of HACCP system in the enterprise,but also very necessary.
