摘要
随着近几年国内冷食市场的发展,冷食生产应用技术也在不断的提高。本文讨论的是冷食产品中水冰制品的相关生产技术,涉及到原材料选用技巧、生产过程中合理化工艺的设定及配方设计合理性。最主要讨论了水果风味冰制品酸甜比的调配和风味香气的调配及香精的选用建议。
Because of the improvement of the domestic ice-cream market,the ice-cream production and application technique increased a lot.This article focuses on the manufacture techniques for fruit bars,such as choosing material,improving process and prescription adjustment.
