摘要
新型乳品的生产越来越离不开乳酸菌。现代生物技术发展日新月异,对乳酸菌的研究也进入了分子水平。本文将重点介绍应用乳酸菌基因组学(比较基因组学和功能基因组学)在乳品发酵菌种及益生菌方面的应用:1)筛选具有特定胞外多糖特性(如短结构、拉丝状)及数量的嗜热链球菌;2)通过对益生菌基因组的分析,可以将它们的基因特点和益生功能联系起来,在分子水平上筛选具特定功效的益生菌菌株;3)进一步探索噬菌体的分子进化规律,阐明乳酸菌抗噬菌体的机制。
Lactic acid bacteria is applying more and more in diary industry.Along with the development of molecular biotechnology,the research and development of lactic acid bacteria is on the molecular level,which will leads to deeper understanding and more condition specific explore in terms of different target.Three applications was briefly introduced here,they are:1)Screening short and thick EPS producing S.thermophilus strains by using Genemic technics;2)Screening probiotics with targeting health benefits by using functional genomics;3)Introducing the CRISPR-Encoded Rsistence in Streptococcus thermophilus.
