摘要
以水作为壳膜分离剂,研究其对鸡蛋壳与蛋膜分离的影响,直接筛除目数>200目的蛋壳粉后,壳膜分离效率得到显著提高,且蛋壳与蛋膜物理化学成分未发生变化。首先通过试验确定了反应中搅拌时间、料液比、搅拌速度、分离次数和静置时间,通过正交试验确定最佳壳膜分离条件,结果表明:以蛋壳收率为指标,最佳分离条件为:搅拌时间为20min,料液比为1∶10,搅拌速度为600r/min,分离次数为4次,得到蛋壳收率为94.47%,蛋壳中蛋膜残留率为0.2718%。以蛋膜收率为指标,最佳分离条件为搅拌时间为10min,料液比为1∶6,搅拌速度400r/min,分离次数为4次,得到蛋膜收率为4.220%,蛋膜中Ca残留率为1.340%。
The water has been used as the environmental protective separation substance for the eggshell membrane in this study.The eggshell membrane separation efficiency has been improved significantly when get rid of the eggshell powder whose size more than 200 mesh,and the physical and chemical composition of eggshell and its membrane has not changed.Firstly,five factors influencing effect of eggshell membrane seperation have been studied,including the mixing time,mixing speed,solid-liquid ratio,seperation times and static duration,and the optimal separation conditions have been determined using orthogona1 experiment.The result shows that:when used the yield of eggshell as the indicatrix,the optimum eggshell membrane separation conditions are as below:mixing time 20min,liquid ratio of 1∶10,mixing speed 600 r/min,the separation times 4,can get the yield of eggshell up to 94.47%,the membrane residual rate is 0.271 8%,When used the yield of membrane as the indicatrix,the optimum eggshell membrane separation conditions are as below:mixing time 10 min,liquid ratio of 1∶6,mixing speed 400 r/min,the separation times 4,can get the yield of eggshell membrane up to 4.220%,the membrane residual rate is 3.34%.
