摘要
从微生态学及临床医学的角度综合论述了双歧酸奶对人体保健功能的机理,并对双歧酸奶生产工艺中诸如双歧因子的选择等几个关键问题进行了探讨。
The health care mechanism of Bifidobacteria fermented milk to man body is studied on the basis s of microecology and the clinical medicine. Some key questions of the processing technology, such as the selection of bifidus factor and others, are also discussed.
