摘要
莲子在40℃、100%相对湿度下人工加速老化,去壳者在4d后活力显著降低了49%,6d后发芽力降低了25%;不去壳者在15d内没有变化.去壳者在老化过程中,SOD活性降低,电解质渗漏率、MDA含量及LOX活性逐渐增高;胚芽中蛋白含量基本不变,子叶中则降低,但其中热稳定蛋白都显著增加.
