摘要
用UV和化学方法研究确定了苦水玫瑰花的色素主要成份是矢车菊-3-葡萄糖苦和辅色素树皮黄素管等。该色素在中性和弱酸性溶液中为玫瑰紫红色，弱碱性溶液中呈蓝绿色，对光和热有一定的稳定性。
The paper presents how the pigment of ' Ku-shui' rose is studied and determined by UV and chemical method.Its main component is cyanidin - 3 - glycosid and quercetin -glycosid . This pigment is violet-red in acid or neutral solution,green-blue in base solution. It shows certain stability at heating or lighting.
