AOT/异辛烷反胶团体系中工业脂肪酶催化性能研究

摘要 本文研究了工业脂肪酶(EC3.1.1.3)在AOT/异辛烷反胶团体系中催化橄榄油水解的反应,发现此反应可用于分析反胶团中工业脂肪酶的催化性能。结果表明:在20℃,PH6.5,R([水]/[AOT]摩尔比)=9.8的条件下,脂肪酶的活性最高;脂肪酸在R=5.6的反胶团体系中较稳定;当底物浓度高达40%(V/V)时仍无底物抑制现象. The industrial lipase solubilized in AOT/isooctane reverse micelles could catalyze the hydrolysis of olive oil. and the catalytic performance of the industrial lipase was investigated in this system. The suitable hydrolytic conditions observed for the industrial lipase in reverse micelles are t=20℃. PH= 6. 5 and R ([H2O]/[AOT]. molar ratio of water to surfactant) = 9. 8. This hope was found to be more stable in reverse micelles with R= 5. 6 than else conditions. No inhibition has been found so far as the substration concentration increased up to 40 % (V/V).
