摘要
本试验分别在饲料和宰前饮水中添加促嫩剂1.5%和2.0%混合磷酸盐饲喂淘汰蛋鸡,通过对其剪切力、系水力、氨基酸含量指标的测定和感官品尝鉴定,以研究其致嫩效应。结果表明:在饲料中添加2.0%的混合磷酸盐致嫩效应显著(P<0.05)。
The experiment was to add the mixed phosphate in the diets and drinking water before die for the rejected layers,respectively,in order to study 1. 5% and 2. 0% its tenderizing effect by means of statistics,i. e. shearing strength,holding water capacity,amino acid, and sensory organ tasting. The results were as follows; Z. 0% mixed phosphate added to the feed conld significantly improve the tenderness of the rejected layers.
