The Chinese soft-shell turtle is regarded as a traditional Chinese corroborant and valuable Chinese medicine. It is of high nutrition, containing many elements necessary for health such as polypeptide, holoside, amino-acid and vitamin A, D, E and other trace elements. When they are extracted through the traditionalprocessing method under high temperature, all these elements are easily dissolved and broken down, losing their biological activation.
