本文研究从薯莨中提取天然色素的方法，并对色素的稳定性，抗氧化性及抑菌性进行了试验．实验证明，该色素是一种多功能的天然色素．测定色素的主要成份是单宁．

The extracting process of the natural pigment from the Dioscorea Cirrhose Lour is studied,and thee stability,antioxidatlon,fungistatic activities of the pigment are tested,constituent of the pigment is identified as tannin.
