摘要
无花果营养丰富,具有明显的保健和防病功能。无花果很难贮运,但适于加工。本文介绍了无花果果酱、无花果脯(苏式和广式)、无花果汁和无花果口服液的加工工艺和操作技术。目的是为无花果资源的开发和利用提供实用有效的途径。
Fig fruit(Ficus carica L.)is rich in nutrition and have significent functions of health protection and disease resistance.Fresh fruit is perishable in storage and transport,but suitable for process- ing.Technological and operational processes for the processing of fig jam,candied fruit,fig juice drink and oral drink are described in this paper on purpose to supply the practical and efficient way to utilize the fig fruit.
