摘要
近年来,杭帮菜在国内及港台地区深受顾客青睐。与其他地方菜相比,杭帮菜在创新、价格、规模上有相当优势。但是,杭帮菜在发展中也出现了如品种、质量、管理等问题,杭帮菜要持续发展必须走多元化、精致化、人本化、工业化与科技化相结合的模式。
In recent years Hangbang cuisine ( popular in Hangzhou region, Zhejiang) has found flavor in the eyes of domestic customers and the customers from Hongkong and Taiwan regions. Compared to other local style dishes, Hangbang cuisine enjoys superiority in dish innovation, dish price and production scale. However, with its development there also arise some problems concerning, for example, its variety, quality, management and so on. In order to gain its successive development Hangbang cuisine should break a road according to the mode which combines the ways of multiplicity, delicacy, humanism, industrialization and the stress on science and technology.
