摘要
Longiing tea is a famous traditional green tea in China.on the manufacturing process,the tan-fang process is an important treatment to make thecharacteristic aroma of longjing tea.In this paper,the tan-fang effect on the production of aroma has been investigated bycomparing each aroma pattern among longjing tea made by different tan-fang treatments,antthe specific role of the tan-fang process is discussed.
