摘要
本文使用AAS法、Rf和SP法测定了河南100种重物中的K、Na、Ca、P、Cu、zn、Fe、Se八种元素。测定结果为全国制定食物营养成分表提供了科学数据,给出了河南各类食物中八种元素的含量水平,找出了每种化学元素含量较高和较低的食物,得出了河南人体内缺Se、Ca的结论。此项研究为人们调节食物结构提供了参考。
The concentration of eight elements(K、Na、Ca、P、Cu、Zn、Fe、Se)in one hundred kinds of food of Henan Province has been reported, which were determined by AAS, Rf and SP. This result provided scientific data for making of the table of nutrition composition in food for our country. Level of the eight elements in various food of Henan Province has been siren and the kinds of food were found in which content of each chemical element was higher or lower. The conclusion was taken that Se and Ca were poor in human body in Henan province. This study will provide reference that men would adjust structure of food.
