上农金参桔酱(又名面包伴侣)的研制

摘要 上农《金参桔酱》,所采用的主要原料是废弃物桔皮和廉价的胡萝卜。桔皮中除含维生素 C 外,还含有酚类、黄碱素和右旋柠檬素等有效成分;而胡萝卜中的β—胡萝卜素被人体摄入,经胆汁和酶的作用即转变成维生素 A。由于制品富含营养并在医疗学上具有多种疗效和抗癌功能,因此深受有关食品厂和消费者的青睐。鉴于原料丰富,又充分利用了废弃物,所以既减少了对江河环境的污染.又可增加收入,因而这一蔬果型保健食品的研制和开发,是具有深远意义的。 The main ingredients of Shangnong Jinshen JuJiang developed are the orange crust and cheap carrot.The orange crust is composed not only of the Vitamin C but also of some effective elements.such as phenols,flavone and dextrocitrin,etc The β-carotenes in carrot absorbed by human body will be converted into the Vita- min A by means of bile and enzyme.Because the product is full of nutrients,and has a lot of medical functions in physiatrics and cancer-resistant function, several tons of sample product developed were sold out within three days.This product is warmly welcomed by food products factories concerned and a large num- ber of consumers.Owing to the abundance of the raw materials,and the full utili- zation of the abandoned materials,the pollution of river environment is decreased simultaneously with the income being increased.So the research and development of this vegetative and fruit type food product has a far-reaching meaning.
