摘要
研究结果表明,国光和青香蕉苹果在生长、成熟期间,维生素C、还原糖和过氧化氢酶含量随果实膨大而增加,采收前一个月积累量最高,后略有下降;而过氧化氢酶活性高峰的出现比前两者早些。在冷藏期间,维生素C和还源糖含量逐渐下降,而过氧化氢酶出现两次活性高峰,与果实呼吸跃变期和衰老期相吻合。
Research results showed that the content of vitamin C,reducing sugar and catalase increased with the inflation of fruit in the period of growing, ripening and storing stage in the case of Ralls and White Winter Pearmain; the accumulation of these ingredidnts reached the highest a month before the apples were picked and then declined sliehtly, but the highest peak of the activity of catalase appeared earlier than of the firsttwo ones. In the rifrigeration period, fhecontent of vitamin C and reducingsugar declined gradually. Two active peaks of catalase appeared to tallywity the sudden changing period of respiration and the senile stage of thefruit.
