摘要
通过单因素试验对影响蓝莓花青素微胶囊化包埋率的壁材种类和浓度、芯壁比、CaCl2浓度及针头孔径,进行了筛选,并通过响应面设计试验优化了蓝莓花青素微胶囊的包埋工艺。结果表明,蓝莓花青素微胶囊的最佳包埋工艺条件为:2%海藻酸钠为芯材,芯壁比为17∶60,1.26%CaCl2为成形剂,针头孔径为0.9 mm时,蓝莓花青素微胶囊化的包埋率约为87.5%。
The embedding technology of blueberry anthocyanidin microencapsule was optimized by the response surface methodology based on the single factor experiments. The results showed that the optimum embedding technology of blueberry anthocyanidin microencapsule was as follow:2%alginate as walls, ratio of cores∶walls of 17 ∶ 60, 1.26 % CaCl2 as formagen and needle hole with diameter of 0.9 mm. Under this condition, the embedding rate reached up to 87.5%.
