摘要 本文通过对两组感官结果差异性的分析以及对葡萄与葡萄酒理化指标相关度的分析,建立了基于葡萄和葡萄酒理化指标的葡萄酒质量评价体系.本文通过双因素方差分析,得到感官评价结果的显著差异性.进而通过主成分分析法、系统聚类法、相关系数分析的联合运用得到对酿酒葡萄的分级结果.应用典型相关分析原理进一步研究葡萄与葡萄酒的理化指标之间的联系,对基于理化指标的葡萄酒质量评价体系给出了解析分析结果. Through analysis of the result differences by two groups of sense organs,the correlation between the chemical and physical index of grape and red wine,a red wine quality assessment system is built based on the chemical and physical index of grape and red wine.Through two-factor analysis of variance,significant difference of the sense organ assessment result is acquired.Through the joint application of principal component analysis,hierarchical clustering method and correlation coefficient analysis,the grading result of red wine is gained.The correlation between the chemical and physical index of grape and red wine is further studied using canonical correlation analysis.Finally the interpretive analytical results of the red wine quality assessment system based on chemical and physical index are provided.
