摘要
以米曲霉为菌种,在保留米糠内其它多种生物活性营养物质的前提下,利用液体和固体两种发酵方法生产γ-氨基丁酸(GABA),在单因素实验的基础上采用正交分析法对米糠富集γ-氨基丁酸(GABA)的培养基组分谷氨酸(GLU)、CaCl2和Tween-80进行优化。结果表明,米糠富集GABA的最适培养基组分为谷氨酸5g,CaCl24g,Tween-80 4mL。GABA富集最高量是固体发酵时的142.04mg/100g。
Rice bran was as raw materials,the γ-aminobutyric acid( γ-GABA) was produced by liquid-and solid-state fermentation using Aspergillus oryzae. The effect of added the GLU,CaCl2and Tween-80 during fermentation on produced yield of the γ-GABA was explored. The results showed that the Suitable additives were 5g of GLU,4g of CaCl2and 4mL of Tween-80,then the γ-GABA contents in solid-state fermentation was higest,reached142. 04mg /100g.
