肌肉拉伸技术在冷却肉加工中的应用 被引量:2

摘要 在冷却肉特别是牛羊肉的加工中,由于快速冷却而造成冷收缩,导致肉嫩度的下降。肌肉拉伸技术可以改善肉的嫩度或可以保持肉的嫩度,因此越来越受到人们的关注。着重介绍几种国外研究的肌肉拉伸技术,为我国冷却肉加工提供参考。
