摘要
通过对不同成熟度冬枣进行贮藏保鲜试验,确定了最适宜冬枣贮藏的采收成熟度为初红成熟度。该成熟度冬枣贮藏65d,好果率高达97.8%,可溶性固性物含量增加10.8%,硬度降低13.2%,Vc含量增加0.2%,可滴定酸仅降低4.5%。
The keeping flesh storage of varying mature degree of winter jujube was tested. And the mature degree that was the most appropriated for storage was early red degree. In this degree, the rate of fine fruit was up to 97.8%, the content of soluble solid increased 10.8%, the hardness decreased 13.2%, Vc increased 0.2%, and the neutralized acid only decreased 4.5%.
