摘要
针对热敏性物料干燥提出一种高压电场干燥的新型干燥技术,以胡萝卜为对象进行高压电场干燥和热风干燥对比试验,及对其干燥后的胡萝卜素进行检测和复水试验。结果表明:高压电场能够加速胡萝卜的干燥,干燥时间缩短43.3%,且能够很好的保留胡萝卜素,高压电场干燥样品的胡萝卜素含量比热风干燥样品高10.86%。高压电场干燥的胡萝卜在复水性上比热风干燥的平均高11.7%。并分析了高压电场干燥机理,认为是电场中载能离子注入、非均匀电场和离子风外部吹动三部分合一的过程,即"电场能传质"。
A new drying technology with the high voltage electric field was put forward for heat sensitivity materials in the paper. The parallel drying experiments of carrot were done with High Electric Drying(HED) and Heat Drying. The carotene remaining experiments and rehydrating experiments were done. The results indicate that the drying rate of carrot is higher on high electric field drying with the drying peroid reducing by 43.3%, and that more carotene can be remained than those of heat drying. The ability in rehydrating of the carrot is higher by high electric drying than that by heat drying. The mechanism of high electric field drying was studied. And it is thought that the drying mechanism of high electric field makes up of the injection of ion, the effect of uneven electric field and function of ion wind. That is what the mass transfers by the electric energy.
