摘要
对甲壳低聚糖(COS)的溶解性、黏度、稳定性等进行了测定和研究。结果表明:①COS在pH1~13内都有优良的水溶性;COS在不同溶剂中的溶解性不同;②COS水溶液的黏度随温度的升高而下降;在同一温度下,同样质量分数的COS水溶液黏度远大于低聚果糖(FOS)和低聚异麦芽糖(IMO);③当温度小于80℃时,COS溶液较稳定;pH2~5 5下COS溶液的热稳定性较好。DSC分析进一步证明COS的热稳定性较好。
The solubility,viscosity,stability, reaction of chito-oligosaccharides(COS) were measured and studied.The results showed that: ① COS has good solubility in water from pH 1 to pH 13 and their solubility varies in different organic solvents. ② Viscosity of COS water solution decreases with the increase of temperature, and their viscosity is higher than that of fructo-oligosaccharides (FOS) and isomaltooligosaccharides (IMO) water solutions.③ They have good thermal stability at temperature lower than 80 ℃,under pH 2~5.5 as confirmed by DSC (differential scanning calorimeter) study.
