摘要 简述了谷胱甘肽的生理功能及在临床医药和食品工业等领域的应用,重点综述了酶法和发酵法生产谷胱甘肽的研究进展和需要解决的问题,最后简要介绍了国内谷胱甘肽的研究现状。 Glutathionet one of the important biological medicines and food additives, can quickly improve the immune capacity of human bodies. In this mini-review, the physio gical functions of glutathione and the application prospect of glutathione in the fields of clinics and food add ives were summarized. The emphasis was focused on the progress and problems on glutathione production by enzymatic method and fermentation. In the end, the current research on glutathione production in China was b efly described.
