摘要
在红酵母发酵生产胡萝卜素的提取工艺中,增加了皂化和乳化工序,制得了β-胡萝卜素含量约为500~600μg/g的水溶性良好的胡萝卜素粉制剂。实验所确定的适宜条件主要为:在红酵母细胞的丙酮浸提液中按每毫克胡萝卜素加入浓度30%的NaOH溶液30mL,在沸水浴中中皂化4h:乳化剂(由蔗糖酯和单甘酯按2:1质量比组成)添加量为制品量的0.3%。
Producing carotene powder with high water-solubility from rhodotorula is elementarily studied. Saponification is indispensable in this process,which can improve the purity, stability and water-solubility of this product. The suitable process conditions are as follows: the concentration of NaOH as 30%, the volume of NaOH as 30mL(to lmg carotene in the soaking liquor of acetone), the time of saponification as 4h, the addition quantity of emulsifying agent(sarcrose fatty acid ester∶glycerin monostearate=2∶1)as 0.3%.This powder contains ?carotene 500~600mg/g.
