摘要
本文介绍了酶技术、发酵技术、膜分离技术及冷冻相关技术等现代高新技术在鸡肉及其副产品综合利用中的应用现状和前景,阐明了高新技术在鸡肉加工及其副产品综合利用中的经济及社会意义,为鸡肉加工及其相关产业提供了参考。
This paper give a brief introduction of high-technology in application of enzyme, ferment, membrane separation, freezing etc in chicken and its by-product. Significance of high technology application in economy and society was pointed out. Reference was provided for chicken processing and related industry.
