半夏中β-谷甾醇的抗氧化作用研究

研究半夏中 β 谷甾醇对自由基的消除能力及抗氧化作用。通过测定 β 谷甾醇对Fenton反应产生的羟自由基 (·OH)的清除率 ;对超氧阴离子 (O·2 )的抑制率 ;及其在猪油中抗氧化活性 ,发现 β 谷甾醇对氧自由基具有较强的抑制作用 ,对油脂也有较强的抗氧化作用。表明 β

The antioxidant and free radical scavenging activities were detected in β-sitosterol of Pinellia ternate (Thunb.) Breit. The result showed that the extracts can effectively scavenge hydroxyl (·OH)radical and superoxide anion (O · 2) radical,and it can effectively inhibit the lard preoxidation. All of these resultsindicatethat β-sitosterol of Pinellia ternate(Thunb.) Breit is of potentialvalue as oil and fat antioxidant in food industry.
