摘要
小分子大豆肽是大豆蛋白水解后 ,由 3～ 6个氨基酸残基组成的肽混和物 ,分子量在 1kDa以下。由于它具有很多优良的理化特性和生理功能 ,因此在很多领域得到了广泛的应用。本文简要综述了这方面的内容以及关于大豆肽的最新研究进展。
little molecule soybean peptides is the hydrolysate of soy protein and a mix of low peptides which composis of three to six residences.Its molecular weight is under 1kDa.Because of its good functional properties and physiological activities, it is used in many fields. This thesis briefly summarizes the progress in this field.
