烤烟陈化过程中挥发性、半挥发性脂肪酸和pH的变化研究 被引量:29

摘要 使用同时蒸馏萃取装置、气相色谱 /质谱联用 (GC/MS)仪 ,对约 3年自然陈化过程烤烟复烤叶片挥发性、半挥发性脂肪酸的变化进行研究 ,烟草水溶液pH的变化也进行了跟踪分析。结果表明 ,烤烟约 3年的自然陈化过程中 ,挥发性、半挥发性脂肪酸含量呈上升趋势 ,多数成分在陈化至 2 5 3 1个月左右 ,含量达到最高 ,之后含量缓慢下降。烟草水溶液pH一直呈下降趋势 ,陈化 3年后 ,pH约降低了 5 % ,陈化初期 pH下降速度大于陈化后期。对烤烟陈化过程烟草挥发性、半挥发性总量 (不含十六酸 )与 pH的变化进行了相关性研究 ,两者的相关系数为 0 .874,显示了很好的负相关关系。 The acidic components were analyzed with simultaneous distillation and extraction equipment by GC/MS to observe the changes of the acids in redried lamina of Yunnan flue-cured tobacco during three-year aging.The change of pH was also studied.The results show:the contents of the volatile,semi-volatile acids indicate increasing trend.Most acids reach the highest point during 25-31months of aging,then drop slowly,pH of tobacco lamina always decreases during three-year aging and pH of lamina reduces about 5% after three years.The reducing speed during early aging exceeds that of late aging.In addition,the correlativity between pH and total acids during aging was studied.The coefficient of correlation is -0.874.
